Ingredients:

  • 14 oz fresh Chow Mein Noodles* or 16 oz. Shirataki Spaghetti or Angel Hair Noodles cooked, drained and cooled.
  • 2 handfuls, combined, of the following fresh herbs*, rinsed and torn into small pieces: Thai Basil, Mint, and Rau Ram. You may substitute Italian Basil for the Thai Basil and Cilantro for the Rau Ram but the taste won’t be exactly the same.
  • 3 Tbs Peanut Oil
  • 1 Tb Extra Virgin Olive Oil
  • 2 Tbs finely minced Shallot
  • 1 tsp finely minced Garlic
  • 2 Tbs Ginger paste or finely minced Ginger
  • 1 Serrano or 2 Thai Chilis, sliced into very thin rounds
  • 1 Tb Rice Vinegar
  • 2 Tbs Sweet Mirin
  • 1 Tb Soy Sauce
  • 3 Tbs Shaoxing Wine or Dry Sherry
  • 1 31-40 size Shrimp, deveined, peeled and tail removed
  • 1 qt no-salt Chicken Broth (can substitute low-sodium variety)
  • Chili Oil for optional use at the table

Preparation:

  1. Divide the fresh or cooked noodles into two deep serving bowls.
  2. Sprinkle half of the fresh herbs into each bowl.
  3. Combine the peanut and extra virgin olive oils in a wok or wide, deep pan over a medium high heat.
  4. Add the shallot, garlic, ginger and chilis to the wok and sauté until aromatic, about 3 to 5 minutes.
  5. While the aromatics are cooking, make the seasoning sauce by combining the rice vinegar, sweet mirin, soy sauce, and Shaoxing wine in a small bowl and set aside.
  6. Add the shrimp to the wok and raise the heat to high; stir-fry quickly until the shrimp just begin to turn a pale pink; do not overcook the shrimp.
  7. Pour the seasoning sauce into the wok and stir-fry quickly for 2 minutes.
  8. Pour the chicken broth into the wok and bring to a simmer.
  9. Spoon the Shrimp Soup with Noodles and Herbs into each bowl and serve immediately. Have chili oil available at the table.
