Guacamole is ubiquitous at the table on game night, pool parties and fun get-togethers. A staple of Mexican cuisine, easy to prepare with a few simple ingredients, fresh Guacamole is also great with grilled meats, carnitas, fajitas and carne asada. Include Guacamole at breakfast with eggs prepared any style and spice up your avocado toast with Guacamole for a change of pace.
Total Time: 20 minutes. Yields about 1 1/2 cups.
Ingredients:
- 1 bunch fresh Cilantro
- Juice of 1 Lime
- 1 small Onion
- 1 clove of Garlic
- 1 Jalapeno or Serrano Chili
- ½ tsp. ground Cumin
- ½ tsp. ground Coriander
- ½ tsp. ground Chili Powder
- ¼ tsp. fine Sea Salt
- 2 Avocados, very ripe/soft to the touch
Preparation:
- Wash and clean cilantro thoroughly. Chop off stems just below the crown of leaves, reserving a few leaves for garnish.
- Peel and trim the onion and garlic.
- Wash the jalapeno, cut off the stem end, slice and lengthwise; remove seeds and ribs if you do not want any heat.
- Combine cilantro, onion, garlic and jalapeno chili in food processor and juice the lime into it; process until the ingredients combine into a rough puree.
- Add the cumin, coriander, chili powder and sea salt to the mixture in the food processor.
- Using a sharp knife, slice avocados lengthwise with the large round pits and skins intact.
- Using the sharp tip of a knife, remove and discard pits, then carefully scrape out the avocado flesh with a teaspoon and add it with the mixture in the food processor.
- Process mixture in the food processor only until it has a thick consistency, like mayonnaise; take care not to over-process it.
- Taste and adjust for seasoning.
- Scrape the guacamole into a bowl to serve, garnishing with the reserved cilantro leaves.
- Serve immediately with tortilla chips or carrot chips.
- Guacamole will oxidize and turn brown if left exposed to the air for any period of time, so it is best prepared very shortly before consumption.
- Squeeze fresh lime juice over leftover guacamole, store in an air-tight container and keep refrigerated until later use within two days of preparation.
