Versatile Brussels sprouts get a full-flavored Asian treatment here. Brussels Sprouts with Shallots and Oyster Sauce incorporates vivid green Brussels sprouts cooked to al dente perfection with caramelized shallots, all draped in oyster sauce. This easy to cook recipe uses just five ingredients; it’s simplicity belies its wonderful combination of colors, flavors and textures. Very colorful and with a delicious aroma, Brussels Sprouts with Shallots and Oyster Sauce will tempt even those who regularly pass on petit choux. This dish is great served with grilled and roasted meats, particularly with our Savory Grilled Pork Roast, or as part of a vegetarian buffet.
Prep Time: 15 minutes, Total Time: 30 minutes. Serves 4.
Ingredients:
- 1 lb Brussels Sprouts
- 3 Tbs Cooking Oil (Peanut/Canola Oil blend is recommended)
- 2 Tbs very thinly sliced Shallots
- 2 Tbs Water
- 2 Tbs Oyster Sauce*
Preparation:
- Trim the bottom ends and remove any yellowing leaves from the Brussels sprouts. Rinse, shake dry and cut the Brussels sprouts in half, reserve in a bowl.
- Add the cooking oil to a wok over a high heat; when the oil is shimmering, add the shallots and stir fry for until lightly golden brown, about 2 minutes.
- Add the Brussels sprouts to the wok, stir to mix, add the water, cover and cook until al dente
- Uncover the wok to allow any built-up steam to escape. Add the oyster sauce, stir to coat the Brussels sprouts, remove from the heat and serve.
*Notes:
- Oyster Sauce comes in a number of variations: Oyster Sauce, Vegetarian Mushroom Oyster Sauce, Oyster Flavored Sauce, etc.; all are readily available in Asian supermarkets and on-line. Some of these oyster sauces may even be available at your regular supermarket. Our favorite is Vegetarian Mushroom Oyster Sauce; it’s a bit less salty than other varieties and adds a richer umami flavor to any recipe which calls for oyster sauce.
