Ingredients:
- 1 lb boneless, skinless Chicken Breasts
- ½ tsp dried Thyme leaves
- ½ tsp ground Marjoram
- ½ tsp ground Sage
- ½ tsp dried Rosemary leaves
- ½ tsp Crushed Red Pepper flakes
- ½ tsp Sweet Smoked Paprika
- ¼ tsp fine Sea Salt
- 4 Tbs Extra Virgin Olive Oil, divided
- ½ Tb very thinly sliced Garlic
- 2 cups Broccoli florets
- 3 oz dry pasta per person, suggested forms are cavatappi, penne rigate or mezze rigatoni
- Grated Parmesan and Pecorino Romano Cheeses at the table
Preparation:
- Holding a chicken breast down with the flat of your hand, slice it thinly, then cut each slice into two pieces; repeat with the remaining chicken breasts. Place the sliced chicken in a bowl.
- Combine the thyme, marjoram, sage, rosemary, red pepper flakes, paprika, and sea salt. Sprinkle these seasonings over the chicken and pour in 2 tablespoons of extra virgin olive oil. Mix the coat the chicken and transfer to a sealable container; refrigerate for 2 to 4 hours to marinate.
- Bring a large pot of well-salted water to a boil.
- Remove the marinated chicken from the refrigerator at least 15 minutes before you start to cook.
- Pour 2 tablespoons of extra virgin olive oil into a deep, wide frying pan over a medium-high heat.
- When the oil is hot, add the chicken to the pan and sauté uncovered until the chicken is lightly browned.
- Add your pasta to the boiling water and cook as directed until al dente.
- Add the garlic to the chicken, stir to mix and continue to cook until the garlic is golden, about a minute or two.
- Add the broccoli florets to pan, stir to mix with the chicken and garlic, cover and cook until the broccoli is just al dente.
- Drain the cooked pasta and add it to the frying pan, stir to mix, remove from the heat and serve.
