Date Cardamom Almond Cookies combine dried dates, heady cardamom and warm nutmeg into a sweet, aromatic, almond delight. Similar in structure to oatmeal cookies, these freeform cookies are chewy and crumbly. Baking with dates can be tricky as their intense sweetness and dense texture can overwhelm most of the other flavors. We chose to incorporate them into an almond and coconut flours cookie dough, which really balances the dates’ intensity and allows the cardamom and nutmeg spices to come through as well. Ingredients:
- ¼ tsp fine Sea Salt
- ¼ tsp Baking Soda
- 2 cups Almond Flour
- 3 Tbs Coconut Flour
- 1 Tb ground Cardamom
- 1 tsp ground Nutmeg
- 3/4 cup Unsalted Butter
- ½ cup Stevia
- 1 large Egg
- 1 Tb Almond Extract
- 1 Tb Vanilla Extract
- 6 ounces finely chopped dried Dates
Preparation:
- Combine the dry ingredients (sea salt, baking soda, almond flour, coconut flour, cardamom and nutmeg) in a bowl and set aside. Chop the dates and set aside in a separate bowl.
- Cream the butter and stevia in a mixing bowl using an electric hand mixer.
- Add the egg, almond and vanilla extracts to creamed butter and stevia in the mixing bowl, mix at a low speed until incorporated.
- Working in three batches, add the dry ingredients to the mixing bowl and mix using the electric hand mixer at a low speed.
- Using a spatula, gently fold the chopped dates into the dough.
- Heat the oven to 350 F degrees.
- On a large baking sheet, place ¾ tablespoon of dough and press down to make a ¼-inch thick roughly disk-shaped cookie; repeat, spacing the cookies ½-inch apart from each other.
- Bake the cookies for 10 minutes, gently flip the cookies over and bake for another 9 minutes; the cookies should be a light golden-brown on each side.
- Remove the cookies from the oven and cool on the baking sheet for 5 minutes, then transfer the cookies to a cooling rack until they are brought to room temperature.
- Date Cardamom Almond Cookies can be stored in an airtight container for up to 3 weeks.
