Beautiful Sicilian Orange Salad is very easy to prepare. For added color, prepare Sicilian Orange Salad with blood oranges, as shown, or a combination of regular oranges and blood oranges. We recommend using really good quality extra virgin olive oil and fresh oregano leaves in this recipe but dried oregano leaves will do if fresh are not available. Ingredients:
- 2 large Oranges or Blood Oranges; if the oranges are small, you will need additional oranges
- 2 Tb fresh Oregano leaves or 1 Tb dried
- ¼ tsp fine Sea Salt
- Extra Virgin Olive Oil
Preparation:
- Peel the oranges carefully and slice into ¼” thick slices, removing any pips and reserving any juice.
- Arrange the orange slices in a single layer on a platter or individual plates and pour any juice over them.
- Drizzle extra virgin olive oil over the orange slices.
- Sprinkle sea salt over the orange slices.
- Arrange the fresh oregano leaves or sprinkle the dried oregano leaves over the seasoned orange slices.
- Allow to rest for 5 minutes prior to serving.
