The bright flavor of fresh Green Beans and the earthiness of fresh Shiitake Mushrooms combine beautifully in this simple stir fry with a remarkably deep flavor profile. Green Beans and Shiitake Mushrooms Stir Fry pairs remarkably well with pan-fried steak or our Fast and Fabulous Pork Chops and serves up as a great vegetarian main course too.
Prep Time: 20 minutes, Total Time: 40 minutes Serves: 4 as a side dish or 2 as a main course.
Ingredients:
- 2 Tbs minced Shallots
- 3 Tbs Cooking Oil (Peanut/Canola Oil blend is recommended)
- 6 oz fresh Shiitake Mushrooms (not dried and resuscitated) *
- 1 lb fresh Green Beans, trimmed and rinsed
- 3 Tbs Water
- 2 Tbs Shaoxing Wine or Dry Sherry
- 1 Tb Dark Mushroom Soy Sauce* You substitute regular soy sauce but the flavor won’t be as deep.
- ½ Tb Red Miso paste
- 1 tsp Sesame Oil
Preparation:
- Break or cut the green beans into bite-size lengths and place in a bowl.
- Gently brush any debris from the shiitake mushrooms. Twist the stems from the shiitake mushroom caps, discarding the stems. Slice the shiitake mushroom caps into ¼ inch strips and place in a second bowl.
- Pour the cooking oil into a wok over a medium-high heat. When the oil is hot, sprinkle the minced shallots into the wok, swirl and fry for 1 to 2 minutes until the shallots are golden-brown.
- Add the shiitake mushroom strips to the wok and stir fry for 2 minutes.
- Add the green beans to the wok, stir to mix, add the water to the wok and cover.
- When the green beans have become a vibrant green color, uncover the wok.
- Add the Shaoxing wine, dark mushroom soy sauce and red miso paste to the wok. Raise the heat to high and stir fry vigorously for 3 to 5 minutes.
- Remove from the heat, pour the sesame oil over the vegetables, stir to mix and serve.
*Notes:
Fresh Shiitake Mushrooms can be found in many supermarkets and Asian specialty supermarkets and grocery stores. Shaoxing Wine and Dark Mushroom Soy Sauce can be purchased in Asian specialty supermarkets and grocery stores.
