Fast and Fabulous Pork Chops

Fast to prepare, these fabulously flavored grilled pork chops will have you wanting to add Fast and Fabulous Pork Chops to your weekly dinner menu. We recommend using bone-in pork chops (you’ll be licking the grilled marinade from the bones) but feel free to use boneless pork chops if those are your preference.  Either way, you will love our Fast and Fabulous Pork Chops which are great with our Easy Yummy Brussels Sprouts.

Fast and Fabulous Pork Chops

Prep Time: 30 minutes, Total Time: 40 minutes excluding marinating time. Serves 2.

Ingredients:

  • 1 ½ tsp coarse Sea Salt
  • 1 tb granulated Sugar
  • 1 tsp ground Black Pepper
  • ½ tsp ground Allspice
  • 1 tsp ground Coriander
  • 1 ½ tsp ground Cumin
  • ½ tsp ground Fennel
  • 1 tsp ground Sage
  • 1 tsp dried Thyme leaves
  • 1 tsp Mustard powder
  • ½ tsp Wasabi powder
  • 2 tsp ground Ginger
  • 1 tb granulated Onion
  • 1 tb granulated Garlic
  • 6 tbs Apple Cider Vinegar
  • 6 tbs Cooking Oil (an Olive/Canola Oil blend is recommended)
  • 4 Pork Chops, rinsed and patted dry

Preparation:

  1. Combine all dry ingredients, sea salt through granulated garlic, in a small, non-reactive mixing bowl.
  2. Add the apple cider vinegar and cooking oil and stir, yielding a thick, yet spreadable paste.
  3. Adjust with small amounts of vinegar and cooking oil, as needed, if the paste is too thick.
  4. In a baking dish or suitable container, take the pair of pork chops and smear the paste onto one side of them. Place these chops, smeared side down, in the dish. Smear the paste onto their reverse, uncoated sides and place the two chops on top of them. Smear the uncoated upper sides of the second pair of chops with the remaining marinade paste.
  5. Cover tightly and refrigerate for at least 90 minutes; I usually prepare the chops in the morning for dinner that evening, allowing a good eight hours for the flavors to permeate the pork chops.
  6. Heat grill to high temperature and oil it lightly. When the grill is hot, place the chops on the grill, turning once. Pork chops about 1-inch thick take 4 to 5 minutes per side to cook; thin pork chops (less than 1-inch thick) take about 3 minutes per side. Regardless of thickness, test that the chops are done with a meat thermometer indicating 165 F.
  7. Remove the pork chops from the grill to a platter and serve immediately.
