Fresh Fig and Walnut Pie is absolutely delicious! When you have a mission fig tree in your garden, as we do, it will yield bountiful crops of figs in the summer. Use some of that crop to make Fresh Fig and Walnut Pie! Easy to make, the crust uses almond and coconut flours and the custard filling can be made with Stevia or another Keto-friendly sweetener instead of sugar to reduce the carbs. Delicious, dense but not heavy nor overly sweet, Fresh Fig and Walnut Pie combines walnuts, the warm spices of cinnamon, nutmeg and cloves and fresh figs for a rich and lovely seasonal dessert. Ingredients:
For the pie crust:
- 1 ½ cup Almond Flour
- 3 tbs. Coconut Flour
- ½ tsp. Baking Powder
- ¼ tsp. fine Sea Salt
- 4 tbs. melted Unsalted Butter
- 1 large Egg, beaten
For the pie filling:
- ½ cup Stevia or another Keto-friendly sweetener or granulated Sugar
- ½ tsp ground Cinnamon
- ½ tsp ground Nutmeg
- ½ tsp ground Cloves
- ¼ tsp fine Sea Salt
- 2 Tbs Cornstarch
- 4 cups chopped very ripe fresh Figs
- 1 cup coarsely chopped Walnuts
- Zest and juice of 1 medium Lemon
Preparation:
- Preheat oven to 350° F. In a large bowl, mix together the almond flour, coconut flour, baking powder, and sea salt.
- Add melted butter, mix with the dry ingredients lightly, then add the beaten egg and mix together to form the pie crust dough.
- Using your hands, press the dough evenly into a deep 10” pie pan, taking care to keep the crust at an even thickness at bend of the pan from the bottom to the sides; prick the dough with a fork to make holes into the crust.
- Bake the pie crust until light golden-brown, approximately 20 minutes; remove the crust from the oven place on a rack and allow to cool thoroughly to room temperature.
- Heat the oven to 365 F; combine the sugar or Stevia, cinnamon, nutmeg, cloves, sea salt and cornstarch in a mixing bowl.
- Chop the figs and walnuts and add them to the mixing bowl
- Zest and juice the lemon, adding both the mixing bowl; stir to mix the ingredients together, yielding a very thick pie filling.
- Spoon the filling into the room-temperature pie crust. Place the pie pan on a baking sheet and place on the middle rack of the oven and bake the pie for 1 hour until the filling is firm and set.
- Transfer the pie to a cooling rack and allow to cool to room temperature before serving. Enjoy Fresh Fig and Walnut Pie with or without a dollop of whipped cream.
