Ham, Peas, Shiitake Mushrooms Pasta

Ham, Peas, Shiitake Mushrooms Pasta sounds fussy but it’s easy to prepare and so delicious. Ham, Peas, Shiitake Mushrooms Pasta

Ingredients:

  • 2 Tbs Unsalted Butter
  • 2 Tbs Extra Virgin Olive Oil
  • 1 Tb Shallot, finely minced
  • 2 Garlic cloves, finely minced
  • 8 oz Smoked Ham, julienned
  • ½ cup Dry White Wine
  • ¼ tsp finely ground White Pepper
  • 1 Tb fresh Sage leaves, finely chopped
  • 1 Tb fresh Marjoram leaves
  • 10 oz Shiitake Mushrooms, fresh or dried and resuscitated, cap only cleaned and sliced into ¼” wide strips
  • 1 cup Green Peas, frozen or fresh
  • 8 oz Heavy Cream
  • 3 oz Pasta per person

Preparation:

  1. Bring a large pot of well-salted water to a boil.
  2. Add the unsalted butter and extra virgin olive oil to a wide, deep pan and heat until the butter is melted and bubbling.
  3. Add the shallot and garlic to the pan and sauté uncovered until just softened but not browned.
  4. Add the smoked ham and continue to sauté uncovered until the ham is just beginning to brown.
  5. Add the pasta to the boiling water, stir and cook until al dente.
  6. Pour in the white wine and continue to sauté uncovered until the wine has reduced by half volume.
  7. Add the white pepper, sage and marjoram, stir and cook until fragrant, about 1 or 2 minutes.
  8. Add the shiitake mushrooms, stir to combine; cook, uncovered, until the mushrooms soften.
  9. Add the green peas, stir to combine and cook for 2 minutes.
  10. Pour in the heavy cream, stir and, raising the heat, cook uncovered until the cream has reduced by half volume.
  11. Gently fold the cooked pasta into the sauce and remove from the heat.
  12. Serve Ham, Peas, Shiitake Mushrooms Pasta immediately with grated Parmesan and Romano cheeses at the table.
