Simple Sautéed Snow Peas is an easy to prepare, versatile side dish which goes well with a variety of main courses, including pork, fish, and chicken, and is a great inclusion in a vegetarian buffet. The bright green of the snow peas dressed in a simple sauce makes this dish both tasty and attractive at the table. Prep Time: 5 minutes, Total Time: 15 minutes. Serves 2.
Ingredients:
- 1 lb Snow Peas*
- 2 Tbs Cooking Oil (Peanut/Canola Oil blend is recommended)
- 2 Tbs very thinly sliced Shallots
- 1 tsp Crushed Ginger*
- 1 Tb Water
- 1 Tb Soy Sauce
- 1 Tb Oyster Sauce*
Preparation:
- Rinse the snow peas in a colander and shake dry.
- Add the cooking oil to a wok over a high heat; when the oil is shimmering, add the shallots and stir fry until lightly golden brown, about two minutes.
- Add the crushed ginger to the wok, mix with the shallots and continue to stir fry for one minute.
- Add the snow peas to the wok, stir to mix, add the water, cover and cook until they begin to soften, about two minutes.
- Uncover the wok to allow any built-up steam to escape. Add the soy and oyster sauces, stir to coat the snow peas and sauté uncovered for 2 minutes, remove from the heat and serve.
*Notes:
- This recipe assumes the use of trimmed snow peas; if you need to trim stem ends from the snow peas, add 5 minutes to the prep time.
- Jars of crushed ginger may be purchased at Middle Eastern and Indian grocery stores and also on-line.
- Oyster Sauce comes in a number of variations: Oyster Sauce, Vegetarian Mushroom Oyster Sauce, Oyster Flavored Sauce, etc.; all are available in Asian supermarkets and on-line. Our favorite is Vegetarian Mushroom Oyster Sauce; it’s a bit less salty then other varieties and adds a richer umami flavor to any recipe which calls for oyster sauce.
