Swordfish with Lemon Caper Sauce reminds us of Sicily! Swordfish fresh from the sea, marinated and grilled, and dressed with a sauce of lemon and capers is dining perfection. This recipe uses readily available ingredients and is easy to prepare, just don’t leave the swordfish on the grill too long. Serve Swordfish with Lemon Caper Sauce with Simple Sautéed Snow Peas, as shown, or Herbed Zucchini with Ginger and Garlic, accompanied by a very dry white wine. No swordfish available? You can substitute Mahi Mahi fillets, just adjust the grilling time for the thickness of the fillets.
Fish: Prep Time: 15 minutes, Total Time: 30 minutes plus marinating time.
Sauce: Total Time: 10 minutes. Serves 2.
Ingredients:
For the fish:
- 2 Swordfish Steaks of approximately 1-inch thickness
- ¼ tsp fine Sea Salt
- 1 Tb minced fresh Rosemary leaves
- 1 Tb minced Garlic
- 1/3 cup freshly squeezed Lemon Juice
- ½ cup dry White Wine
- Cooking Oil for grilling
For the sauce:
- 1 large Shallot, peeled and trimmed
- ½ tsp coarsely-ground Black Pepper
- 1/3 cup freshly squeezed Lemon Juice
- 1/3 cup Extra Virgin Olive Oil
- 2 Tbs Capers in brine, drained
Preparation:
- Pat the swordfish steaks dry.
- Combine the sea salt, rosemary leaves, garlic, lemon juice and white wine in a bowl and whisk together to make the marinade.
- Pour half the marinade into an airtight container large enough to hold the swordfish steaks. Place the swordfish steaks into the marinade in the container, then pour the remaining marinade over the fish. Cover, refrigerate and marinate for 4 to 6 hours or up to 8 hours.
- When ready to grill, remove the swordfish steaks from the refrigerator and prepare the lemon caper sauce.
- Cut the shallot into pieces and place in a hand-blender container.
- Add the black pepper, lemon juice and extra virgin olive oil to the container and blend until the shallot is minced and the lemon juice and olive oil emulsify.
- Pour the sauce into a serving bowl, add the capers to the sauce and stir to mix.
- Heat the grill to a high heat, i.e. you can hold your hand 1-inch from the heated grill surface for only 5 seconds.
- Brush the grill surface lightly with cooking oil, watching for flare-ups.
- Remove the swordfish steaks from the marinade and place on the heated grill surface and grill for 5 minutes per side. Serve immediately with the lemon caper sauce.
