Herbed Zucchini with Ginger and Garlic

Zucchini or Italian Squash is a very versatile vegetable.  Here, the zucchini is gently sautéed with herbs, ginger and garlic to make a simple, elegant and very tasty side dish which complements a variety of main courses of beef, pork, chicken and fish, such as Savory Grilled Pork Roast or Fish with Baharat and Lemon. Herbed Zucchini with Ginger and Garlic

Ingredients:

  • 1 ½ lb Zucchini
  • 2 Tb unsalted Butter
  • 1 Tb Extra Virgin Olive Oil
  • 1 tsp minced Ginger
  • 1 tsp minced Garlic
  • 1 tsp dried Rosemary leaves
  • ½ tsp dried Thyme
  • ½ tsp ground Sage
  • ½ tsp ground Marjoram
  • ½ tsp ground Fennel
  • ½ tsp Coarse Sea Salt

Herbed Zucchini with Ginger and Garlic

Preparation:

  1. Wash and trim the ends from the zucchini, slice into very thin, 1/8-inch thick rounds.
  2. Mix the seasonings (rosemary, thyme, sage, marjoram and sea salt) together in a small bowl.
  3. Add the unsalted butter and extra virgin olive oil to a 3-quart saucepan over a medium heat until the butter melts.
  4. Add the ginger and garlic to the saucepan, sauté uncovered golden brown.
  5. Add the seasonings to the saucepan and sauté until fragrant, 1 or 2 minutes.
  6. Add the sliced zucchini to the saucepan, stir gently to mix with other ingredients, cover and cook, stirring a few times, until the zucchini has softened.
  7. Transfer to a bowl and serve immediately.
