Dirty Cauliflower Rice is an easy to prepare side dish which uses just a few common ingredients and yields tasty results. We really enjoy Dirty Cauliflower Rice as a side dish with Tilapia and Shrimp Veracruz. Relatively guilt-free in terms of carbohydrates, Dirty Cauliflower Rice is a great substitute for rice, with a nice subtle flavor of its own; its gentle texture and color bring interest and add to the enjoyment of eating it. Reheat any leftover Dirty Cauliflower Rice in a wok or frying pan and serve topped with a fried or poached egg for a satisfying breakfast or lunch.

Ingredients:
- 1 head raw Cauliflower
- 2 Tbs Extra Virgin Olive Oil
- 2 Tbs Unsalted Butter
- 1 tsp ground Cumin
- Pinch coarse Sea Salt
- ½ cup thinly sliced Green Onions/Scallions
Preparation:
- Rinse the cauliflower, trim and discard the green outer leaves. Cut away and discard the core, then cut the cauliflower into pieces and rice in a food processor.
- Heat the extra virgin olive oil and unsalted butter in a wok over a medium high heat. Once the butter has melted, add the cumin and sea salt to the wok, swirl and cook, uncovered, for 1 minute.
- Add the riced cauliflower to the wok, raise the heat the high and stir fry until the cauliflower has softened and is beginning to brown.
- Add the green onions/scallions to the wok, mix into the cauliflower and stir fry until the green onions/scallions are beginning to soften, about 2 minutes.
- Transfer the Dirty Cauliflower Rice to a bowl and serve immediately.
