Pickle Brined Pork Chops makes excellent use of leftover bread & butter pickle juice and other seasonings to create a tasty brine marinade for bone-in pork chops. While we favor sirloin cut chops, the recipe works fine with center cut pork chops too, just be sure to select pork chops of at least ½-inch thickness. The marinated Pickle Brined Pork Chops are tender and ready for easy grilling; your neighbors’ mouths will be watering when they get a whiff of the smoke wafting from your grill. Grilled Pickle Brined Pork Chops are great served with Dirty Cauliflower Rice or Green Beans with Cherry Tomatoes and paired with well-chilled, dry rosé wine or icy beer.

Ingredients:
- 2 to 4 Bone-in Pork Chops, approximately 1 ½ – 2 lbs.
- ½ Tb granulated Sugar*
- 1 tsp coarse Sea Salt
- 1 tsp ground Coriander
- 1 tsp ground Turmeric
- 1 tsp Dry Mustard powder
- ½ tsp ground Cumin
- ½ tsp ground Black Pepper
- ½ tsp granulated Garlic
- ½ tsp Celery Seed
- 1 cup Bread & Butter Pickle Juice*
Preparation:
- Combine the sugar through celery seed in a bowl, add the pickle juice and stir to mix well.
- Combine the marinade and pork chops in a sealable container or bag and refrigerate. Marinate the pork chops at least 8 hours or up to 24 hours, turning once or twice.
- Remove the marinated pork chops from the refrigerator and allow to come to room temperature while heating the grill.
- Remove the Pickle Brined Pork Chops from the marinade, discarding the marinade. Grill the pork chops over a direct heat, turning over once, until the meat thermometer reaches an internal temperature of 145 F, approximately 10 minutes or less.
- Remove the grilled Pickle Brined Pork Chops from the grill to a platter and serve accompanied with Dirty Cauliflower Rice or Green Beans with Cherry Tomatoes.
*Notes:
- The recipe is based on using Bread & Butter Pickle juice; if using regular pickle juice, increase the sugar to 1 tablespoon.
