Cream Cheese Celery Sticks

Cream Cheese Celery Sticks are a mid-century modern appetizer.  This classic would have originally not been seasoned, just the cream cheese and the celery, as Vito’s Mom prepared it countless times.  We’ve decided to update this classic appetizer by using a variety of seasonings to top it; “Fancy Shmancy”, as Vito’s Mom would say.  You can be creative with your seasoning selections; our favorite seasonings are everything bagel topping, herbes de Provence, lemon pepper and a homemade blend of sweet smoked paprika, fine sea salt and garlic powder.  Get creative and create seasonings to suit your taste.  Cream Cheese Celery Sticks are quick and easy to prepare as an appetizer for a weeknight dinner.  They also make a great component of an antipasto or mezze along with Tuna Tapenade, Ajvar Eggplant Red Pepper Spread, olives and cheeses.

Cream Cheese Celery Sticks

Total Time: 20 minutes. Yields 20 bite-size pieces.

Ingredients:

  • 4 Celery stalks
  • Cream Cheese
  • Seasonings

Preparation:

  1. Rinse the celery stalks, dry with a lint-free cloth and trim off the bottom and top ends. The cream cheese will adhere better to a dry surface on the celery.
  2. Hold a celery stick in one hand and, using a butter knife, gently fill the cavity in the celery stalk with cream cheese; repeat with all celery stalks.
  3. Lightly sprinkle a seasoning over a cream cheese filled celery stalk. We used everything bagel topping, herbes de Provence, lemon pepper and a homemade blend of sweet smoked paprika, fine sea salt and garlic powder for seasonings, as pictured.  You can use one seasoning on all of the celery stalks or a different one on each celery stalk or none at all.
  4. Using a sharp chef’s knife, slice each seasoned, filled celery stalk at an angle into five pieces.
  5. Arrange the Cream Cheese Celery Sticks on a festive plate and serve.
