Green Beans Indonesian Style

Green Beans Indonesian Style or Sambal Goreng Boontjes is absolutely delicious and even better the next day. Fresh green beans enhanced by aromatic and mildly spicy Indonesian seasonings, then simmered in coconut milk is a great new way to prepare this versatile vegetable. Serve as a side dish with Balinese Pork Kerrie Ketjap, accompanied by freshly steamed white rice for an Indonesian-themed dinner or enjoy Green Beans Indonesian Style over rice as a light meal.

Green Beans Indonesian Style

Ingredients:

  • 1 Lb fresh Green Beans
  • 3 Tbs Cooking Oil (recommend Peanut/Canola Oil blend)
  • 1 large Onion, chopped, yields approximately 1 ½ cups
  • 2 cloves Garlic, minced
  • 1 ½ tsp Sambal Oelek
  • 1 ½ tsp Galangal Powder*
  • 1 ½ tsp Brown Sugar
  • 1 stalk Lemon Grass, trimmed and cut into 1” sections
  • 1 Bay Leaf, preferably fresh
  • 14 oz Coconut Milk, shaken vigorously to mix up the milk and cream
  • fine Sea Salt, to taste

Preparation:

  1. Trim, wash and cut the green beans into 1 ½” pieces.
  2. Pour the cooking oil into a wok over a medium-high heat, swirling the oil around to coat the wok’s sides.
  3. Add onion and garlic to the wok and sauté until onion becomes soft and translucent.
  4. Add the green beans to the wok and stir-fry until the green beans begin to soften, about 8 to 10 minutes.
  5. Add the sambal oelek, galangal powder, brown sugar, lemon grass and bay leaf to wok, stirring to mix.
  6. Pour the coconut milk into the wok, stirring all ingredients to mix thoroughly.
  7. Cover and slowly simmer over a medium heat, reducing the liquid volume by half.
  8. Add sea salt to taste and remove from heat.
  9. Discard the bay leaf and lemon grass pieces and serve Green Beans Indonesian Style accompanied by freshly steamed white rice.

*Note:

  • Galangal is related to ginger and turmeric; galangal powder can be purchased in Asian specialty markets and grocery stores and on-line.
