Pork and Imitation Crab Stir Fry

Pork and Imitation Crab Stir Fry offers a great combination of land and sea proteins in a tasty and attractive stir fry. It is easy to prepare and relatively inexpensive. You can use pork stew meat or boneless pork loin chops for the pork.  Imitation crab, sometimes referred to as krab, is not actually crab at all; it is made with surimi, a fish paste, to mimic the texture and taste of authentic crab. We recommend using imitation crab brands made predominantly with Alaskan pollock, a white fish, king crab and/or lobster in its ingredients, in either the chunk or crab leg/stick serving style. The marinade gives juiciness to the pork while oyster mushrooms and oyster sauce bring umami flavor to the dish. Pork and Imitation Crab Stir Fry

Prep Time Marinade: 15 minutes, Marinating Time: 2 hours,

Ingredients:

  • 1 lb boneless Pork Stew Meat or boneless Pork Loin Chops
  • 2 Tbs Soy Sauce
  • 2 Tbs Shaoxing or Dry Sherry
  • ½ Tb Chinese/Oriental Mustard Powder
  • 1 Tb Ginger Paste
  • 1 ½ cups Onion, sliced lengthwise
  • 1 ½ cups Celery, including leaves, sliced thinly on the diagonal
  • 2 Garlic cloves, sliced thinly
  • 12 oz Oyster Mushrooms, sliced
  • 1 lb Imitation Crab
  • 3 Tbs. Cooking Oil (Peanut/Canola Oils blend recommended)
  • 1 Tb Cornstarch
  • 2 Tbs Oyster Sauce
  • 1 tsp Water

Pork and Imitation Crab Stir Fry

Preparation:

  1. Slice the pork into thin strips.
  2. Combine the soy sauce, Shaoxing or dry sherry, mustard powder, and ginger paste and mix together to create the marinade. Mix the marinade and pork together, cover in an airtight container and refrigerate for two hours.
  3. When ready to prepare the Pork and Imitation Crab Stir Fry, remove the marinated pork from the refrigerator and allow it to come to room temperature while slicing the onion, celery and garlic and combining these vegetables in a bowl. Slice the oyster mushrooms and reserve in a separate bowl. Break the imitation crab into bite-size pieces and reserve in a third bowl
  4. Add the cooking oil to a wok over a high heat. Distribute the marinated pork into the wok and stir fry until the pork has browned, about 15 minutes, then remove the pork to a bowl and keep warm.
  5. Add the onion, celery and garlic to the wok and continue to stir fry for 5 minutes.
  6. Add the oyster mushrooms and imitation crab to the wok, stir to mix with the vegetables and stir fry for 5 minutes. Combine the cornstarch, oyster sauce and water in a small bowl and set this sauce aside while the mushrooms and imitation crab cook.
  7. Return the browned pork, along with any juices, to the wok. Pour the sauce over everything and stir fry for two minutes.
  8. Remove the heat and serve Pork and Imitation Crab Stir Fry immediately, accompanied by a clean, dry chenin blanc and enjoy!
