Tuna Marinara Pasta Sauce

Tuna Marinara Pasta Sauce combines rich tuna with a marinara sauce enhanced with earthy cured black olives and briny capers. Use good quality canned Italian-style yellowfin tuna or feel free to grill or sauté an ahi tuna steak; either will work very well in this sauce.  Tuna Marinara Pasta Sauce is a long-time family favorite at our house which we discovered to have an unknown family history connection; the first time we served this at dinner with Vito’s parents, Vito’s Mom told us that this was his great uncle Louis’ favorite pasta sauce and it tasted just like his recipe!  Great uncle Louis had been the chef at the family restaurant in Vasto, Italy before he, his sister and her husband, who were Vito’s maternal grandparents, emigrated to the United States.  Imagine that!  Tuna Marinara Pasta Sauce from Italy to New Jersey to California, and now, to you!  Enjoy a Wilted Arugula Salad appetizer prior this main course, and accompany both with a very dry white wine.

Grilled Soy Marinated Tuna

Grilled Soy Marinated Tuna is one of our favorite grilled fish dishes.  The marinade will permeate the tuna and create a dark brown glaze on the tuna steaks when grilled while the interior of the tuna will stay moist and flavorful.  Easy to make, Grilled Soy Marinated Tuna pairs well with simply prepared vegetable side dishes, like Broccoli al Limone, and a dry, crisp white wine.

Curried Tuna Salad

Curried Tuna Salad is a mildly spicy and colorful variation on an old favorite.  We make it often at our place, especially during Lent.  It’s great for lunch and can anchor a dinner when accompanied by an assortment of vegetable sides; quartered ripe tomatoes, thinly sliced cucumber and pickled carrots or radishes come to mind.  Feel free to add a tablespoon of chopped raisins, currants or dried cranberries to Curried Tuna Salad to add a sweet element to it; if you want to spice it up, add finely chopped Serrano or Jalapeno chili.  Not keen on curry? Thai Tuna Salad

Goodbye boring tuna salad, hello Thai Tuna Salad!  Fridays during Lent will never be the same once you’ve had it.  Inspired by the fresh, bold flavors of Thai cuisine, as I’ve experienced and learned in cooking class in Thailand, Thai Tuna Salad takes tuna salad to a whole new level.  Serve Thai Tuna Salad with quartered tomato, thinly sliced cucumber or avocado, it makes a delicious and refreshing lunch, no bread needed.  Also consider Lemony Egg Salad for another different take on an old lunchtime standard.

Tuna Tapenade

Tapenade has its origins in Provence; most recipes have capers, olives and anchovies as their basic ingredients, blended together with good olive oil. Tuna Tapenade riffs on the classic tapenade using good quality tuna as its main ingredient.  It is a proven crowd-pleaser, in fact, it is our single most requested appetizer from friends and guests.

One requirement for any tapenade recipe is that you must use fresh herbs; dried herbs will not work. Cured Black Olives, Extra Virgin Olive Oil and canned Italian Tuna in olive oil are essential to this dish.  These ingredients can be purchased in Italian food stores or the Italian food aisle of supermarkets.  Tuna Tapenade is best made the evening before or early in the day you plan to serve it; the individual ingredients’ flavors will mellow a bit while flavor of the tuna tapenade can incorporate them and develop more fully.  Tuna Tapenade is delicious leftover and will keep, topped-off with a thin layer of olive oil and refrigerated, for about 10 days.
