Apple Bacon and Zucchini Medley

Apple Bacon and Zucchini Medley combines popular, easily accessible ingredients into a savory-sweet, flavor-packed side dish which can be served with a variety of main course choices.  Easily prepared, Apple Bacon and Zucchini Medley has something for everyone. Apple Bacon and Zucchini Medley

  • 2 Granny Smith Apples
  • 2 Zucchini
  • 1 medium Red Onion
  • 4 oz sliced Bacon (Maple Cured Bacon is recommended)
  • 1 Tb Extra Virgin Olive Oil
  • 1 Tb Unsalted Butter
  • ½ Tb fresh Marjoram leaves, if unavailable substitute ¼ tsp dried Marjoram


  1. Peel and core the Granny Smith apples, then cut into ¼-inch thick slices, reserve in a bowl.
  2. Rinse and trim the zucchini, then cut into ¼-inch thick half-moon slices and combine with the sliced apples.
  3. Peel and trim the red onion, then slice thinly lengthwise (top to bottom) and reserve in a second bowl.
  4. Cut the bacon slices crosswise into ¼-inch wide pieces.
  5. Heat the extra virgin olive oil and bacon pieces in a wide, deep frying pan or wok over a medium-high heat and brown the bacon.
  6. Add the onion to the pan, stir to mix with the bacon, sauté over a medium heat until the onion softens and begins to caramelize.
  7. Add the apples, zucchini, unsalted butter and marjoram leaves to the pan, stir to mix, cover and cook until the apples and zucchini are easily pierced with a fork.
  8. Keep warm until ready serve the Apple Bacon Zucchini Medley at the table.
