Grilled Shrimp Scampi Pasta

Grilled Shrimp Scampi Pasta

Prep Time Shrimp: 15 minutes, Cook Time Shrimp: 6 minutes.  Prep and Cook Time Sauce and Pasta: 10 minutes. Serves 2.

Ingredients:

For the Shrimp:

  • ½ Tb minced Garlic
  • ½ Tb Crushed Red Pepper flakes
  • ½ tsp Sweet Paprika
  • ½ tsp coarse Sea Salt
  • ½ cup freshly-squeezed Lemon Juice
  • 2 Tb Extra Virgin Olive Oil
  • 1 lb 21-25 count Shrimp, peeled and deveined

For the Sauce:

  • 4 Tb Extra Virgin Olive Oil
  • 2 tsp minced Garlic
  • 1 tsp Crushed Red Pepper flakes
  • 1 tsp Aleppo Pepper flakes
  • 3 oz Tomato Paste
  • 1/3 cup dry White Wine
  • 3 oz Fettuccine, Spaghetti, Angel Hair pasta per person

Grilled Shrimp Scampi Pasta

Preparation:

  1. Combine the minced garlic, crushed red pepper flakes, paprika, sea salt, lemon juice and extra virgin olive oil in a deep bowl and vigorously whisk the marinade together.
  2. Add the peeled and deveined shrimp either with tails on or off, your preference, to the marinade, stir to coat the shrimp, cover and refrigerate while you prepare the sauce.
  3. Set a large pot of well-salted water to boil for the pasta; once it is boiling, add the pasta, stir and cook until al dente.
  4. Pour the extra virgin olive oil in a 2 ½ quart sauce pan, add the minced garlic and sauté uncovered on a medium heat for 1 minute.
  5. Add the crushed red pepper and Aleppo pepper flakes to the sauce pan, stir and sauté uncovered for 1 additional minute.
  6. Add the tomato paste and white wine to the sauce pan, stir to combine all ingredients and simmer uncovered until the sauce has thickened a bit, about 8 minutes.
  7. Heat the grill to high, i.e. you can hold your hand one-inch from the grills surface for 1 minute only.
  8. Remove the shrimp from the refrigerator.
  9. Drain the cooked pasta thoroughly and add to the sauce, stir to coat the pasta with the sauce, cover and remove from the heat but keep warm.
  10. Place the shrimp in a single layer on the hot grill surface and grill for 3 minutes per side.
  11. Plate the sauced pasta in individual bowls or plates, top immediately with the grilled shrimp and serve.
