Onion Cilantro Salsa and Pico de Gallo

Who doesn’t like freshly-made salsas? Our Onion Cilantro Salsa and Pico de Gallo really hit the spot with their fresh flavors and colors.  Onion Cilantro Salsa with its sharp edge of raw onion tamed by fresh lime juice and cool cilantro is so delicious both in taste and simplicity.  Pico de Gallo is a classic mix of fresh tomatoes, herbs, lime juice and chili; it’s so good that it begs you to take a pinch with you index finger and thumb and taste it, hence its name. Taken together, they complement each other to both the eye and palate.  Onion Cilantro Salsa and Pico de Gallo are perfect with Carnitas, grilled steak, chops and chicken, and pretty much whatever you’d like to pair them with.  Enjoy!

Onion Cilantro Salsa and Pico de Gallo

Onion Cilantro Salsa

Prep Time: 15 minutes

Ingredients:

  • 1 medium White Onion, peeled and trimmed
  • ½ bunch Cilantro, rinsed thoroughly and shaken to remove excess water
  • 1 tsp fine Sea Salt
  • 3 Tb fresh Lime juice

Preparation:

  1. Dice the onion and add to a serving bowl.
  2. Chop the leafy top off half a bunch of rinsed cilantro and coarsely chop it; reserve the stems for other use, see Carnitas. Add the chopped cilantro to the serving bowl.
  3. Sprinkle the sea salt over the onions and cilantro in the serving bowl.
  4. Squeeze the lime juice over the ingredients in the serving bowl, stir to mix and serve.

Pico de Gallo

Prep Time: 15 minutes

Ingredients:

  • 2 ripe Roma Tomatoes, rinsed and chopped
  • 1 clove of Garlic, peeled, trimmed and minced
  • 1 Serrano Chili, sliced into very thin rounds
  • ½ bunch Cilantro, rinsed thoroughly and shaken to remove excess water
  • 1 tsp fine Sea Salt
  • 1 tsp dried Oregano
  • 1 tsp ground Cumin
  • 3 Tb fresh Lime juice

Preparation:

  1. Combine the Roma tomatoes, garlic and Serrano chili in a serving bowl.
