Zucchini or Italian Squash is a very versatile vegetable.  Here, the zucchini is gently sautéed with herbs, ginger and garlic to make a simple, elegant and very tasty side dish which complements a variety of main courses of beef, pork, chicken and fish, such as Savory Grilled Pork Roast or Fish with Baharat and Lemon.
