Lasagna alla Bolognese with Ricotta

Lasagna alla Bolognese with Ricotta is a more approachable take on this classic Italian dish.  Replacing the bechamel or balsamella sauce with whole milk ricotta saves time and effort on one of the trickier elements of the classic recipe. As our Classic Bolognese Pasta Sauce is made with heavy cream, it is very rich and silky, further adding to the creaminess of Lasagna alla Bolognese with Ricotta and complementing the ricotta.  Using a mix of six shredded cheeses (Asiago, Fontina, Mozzarella, Provolone, Parmesan and Romano) enriches and enhances the melted cheese component and greatly adds to the overall enjoyment of our Lasagna alla Bolognese with Ricotta.  Don’t forget to serve Classic Bolognese Pasta Sauce on the side with Lasagna all Bolognese with Ricotta, accompanied by a Sangiovese for an authentic Italian dinner and perfect for a holiday meal.

Cape Malay Curry Mince

Cape Malay Curry Mince is a great example of South Africa’s remarkably diverse cuisine, as befits a country of its size and scope.  One of South Africa’s oldest population groups are known as the Cape Malay, originally comprised of peoples brought from various parts of the East Indies to the Cape Colony by the Dutch East India Company in the 17th century, as slaves and indentured servants. With historical cultural references tracing back to Indonesia, China, India and other parts of southeast and southern Asia combined with food stuffs native to South Africa, Cape Malay cuisine is particularly memorable, ranging from starters through to desserts. Savory and sweet elements are often combined in many of its recipes.  South African Cape Malay Curry Mince is in its simplest essence a ground beef curry; however, its subtle mix of seasonings will beguile you and make it so much more.  Start with Sicilian Orange Salad for an unusual but great meal. Beef and Sausage Ragu

Beef and Sausage Ragù is a zesty, hearty sauce.  I created it to serve with bucatini, which was my late father’s favorite pasta; it’s also great with baked macaroni made with ziti, penne or rigatoni.  This recipe makes quite a lot of sauce.  If you’re not using all of it at once, portion out the remaining Beef and Sausage Ragù into containers and freeze for future use within a month.  Start with Breaded Cauliflower followed by your main course of Beef and Sausage Ragù paired with a Chianti for a real Italian dinner.
