Tilapia and Shrimp Veracruz

Tilapia and Shrimp Veracruz offers our version of a Mexican classic, seafood cooked in a rich, tomato and chili sauce.  Inspired by veracruzana sauce usually prepared with red snapper, this recipe includes assorted peppers and chilis in the sauce along with tequila and freshly-squeezed lime juice while omitting the olives and capers; it’s definitely zestier than the original.  Always a crowd-pleaser at our house, Tilapia and Shrimp Veracruz never fails to impress with its heady aroma, colorful appearance and wonderful taste.  The sauce can be made ahead of time, kept covered in the pan and reheated just prior to adding the seafood; the finished dish comes together quickly.  Serve Tilapia and Shrimp Veracruz with white rice or Dirty Cauliflower Rice on the side, as pictured, if you are counting carbohydrates; either way, accompany Tilapia and Shrimp Veracruz with a chilled, dry white wine.

Grilled Chili Scallion Crema

Grilled Chili Scallion Crema is cool crema punctuated with the light heat of grilled chili, sweetness of grilled scallions and accented with cilantro and mint.  This is not your everyday side of crema!  While we enjoy the Mexican culinary use of providing crema on the side with grilled meats, we also find it just a bit bland.  We jazzed up this blank canvas with subtle flavors to add depth and color; it’s so good, you may find yourself enjoying it all on its own.  Serve Grilled Chili Scallion Crema with Mexican Chorizo and Beef Meatloaf for a colorful dinner of bold yet subtle flavors.

Guacamole

Guacamole is ubiquitous at the table on game night, pool parties and fun get-togethers.  A staple of Mexican cuisine, easy to prepare with a few simple ingredients, fresh Guacamole is also great with grilled meats, carnitas, fajitas and carne asada.  Include Guacamole at breakfast with eggs prepared any style and spice up your avocado toast with Guacamole for a change of pace.

Onion Cilantro Salsa and Pico de Gallo

Who doesn’t like freshly-made salsas? Our Onion Cilantro Salsa and Pico de Gallo really hit the spot with their fresh flavors and colors.  Onion Cilantro Salsa with its sharp edge of raw onion tamed by fresh lime juice and cool cilantro is so delicious both in taste and simplicity.  Pico de Gallo is a classic mix of fresh tomatoes, herbs, lime juice and chili; it’s so good that it begs you to take a pinch with you index finger and thumb and taste it, hence its name. Taken together, they complement each other to both the eye and palate.  Onion Cilantro Salsa and Pico de Gallo are perfect with Carnitas, grilled steak, chops and chicken, and pretty much whatever you’d like to pair them with.  Enjoy!

Carnitas

Carnitas is a classic dish in Mexican cuisine; its crisped, browned exterior conceals a moist, juicy interior, wonderful aroma and taste. Carnitas is truly delicious.  While many have had carnitas at Mexican restaurants, few realize that carnitas’ complex mix of flavors belies its fairly simple ingredients and preparation.

I developed this recipe with input from the mothers of two friends, both brilliant home cooks, and was really surprised by how uncomplicated the ingredient list is and how simple carnitas is to make, in terms of active cooking time.  Aside from the prep work and the final browning of the pork, carnitas is not a labor-intensive dish.  This recipe makes use of a slow cooker versus long-simmering on a stove top.  Use the time to make the salsas, Onion Cilantro Salsa and Pico de Gallo, and gather the sides necessary to be served with the main event.  Carnitas is so simple and so good!
