Tilapia and Shrimp Veracruz

Tilapia and Shrimp Veracruz offers our version of a Mexican classic, seafood cooked in a rich, tomato and chili sauce.  Inspired by veracruzana sauce usually prepared with red snapper, this recipe includes assorted peppers and chilis in the sauce along with tequila and freshly-squeezed lime juice while omitting the olives and capers; it’s definitely zestier than the original.  Always a crowd-pleaser at our house, Tilapia and Shrimp Veracruz never fails to impress with its heady aroma, colorful appearance and wonderful taste.  The sauce can be made ahead of time, kept covered in the pan and reheated just prior to adding the seafood; the finished dish comes together quickly.  Serve Tilapia and Shrimp Veracruz with white rice or Dirty Cauliflower Rice on the side, as pictured, if you are counting carbohydrates; either way, accompany Tilapia and Shrimp Veracruz with a chilled, dry white wine.

Pork and Shrimp Stir Fry

Pork and Shrimp Stir Fry combines two very different proteins, pork and shrimp, and some unusual seasoning elements to produce a deeply flavorful and satisfying dish.  The marinade adds bracing Chinkiang vinegar and fish sauce to bring a snap of brightness to the other ingredients and, together with the fermented black beans in the sauce, all serve to increase the umami element of Pork and Shrimp Stir Fry, while the different textures presented by the pork, shrimp and bok choy greatly contribute to the enjoyment of this dish. While we prefer Pork and Shrimp Stir Fry on its own, it can be served with steamed rice or noodles for a larger meal.  As there is no spicy ingredient in Pork and Shrimp Stir Fry, be sure to have some Spicy Sichuan Chili Crisp available at the table.

Grilled Red Pepper Sauce and Shrimp

Grilled Red Pepper Sauce and Shrimp brings sweet red bell peppers and spicy red Fresno chilis together for a sauce which starts at the grill and finishes in the sauce pan.  The sweet and spicy sauce balances and complements simply grilled shrimp, with fettuccine pasta filling out this eye-catching dish. Grilled Meats Creole Gumbo

Grilled Meats Creole Gumbo is a West Coast take on a Louisiana classic.  Made with a roux, flavorful and hearty Grilled Meats Creole Gumbo incorporates the “Holy Trinity” ingredients of Louisiana’s Creole and Cajun cuisines, along with okra, the all-important seasonings, crab meat and shrimp. When making the roux, especially if you’ve never made one before, prepare a roux that is a deep café au lait color which will yield a deep flavor base to the gumbo. Asparagus Prosciutto Shrimp Pasta

This is recipe is a great way to enjoy the fresh and delicate flavors of asparagus, prosciutto and shrimp. Farfalle (butterflies), also known as bowties, are a fun pasta which works really well here. The different colors, shapes and textures of the asparagus, prosciutto, shrimp, pasta and sauce combine to make Asparagus Prosciutto Shrimp Pasta a very attractive and tasty dish for your table.  Keep the colorful theme going with Sicilian Orange Salad for an appetizer.

You will need to prepare this sauce as the pasta boils to get this dish just right.  Timing is really critical to making this dish come out perfectly.  Pay particular attention to parboiling the asparagus; under cooking will yield hard, chewy pieces and overcooking will produce mushy ones.  Likewise, the initial sautéing of the shrimp must take them to the just-turning opaque stage as they will continue to cook as you finish the sauce; you don’t want rubbery, overcooked shrimp here.  The scant amount of heavy cream may seem too little to create a sauce but it will serve to bind all the other elements together and yield a silky, not runny, finish to Asparagus Prosciutto Shrimp Pasta.
