Southern Inspired Pork Stew

Southern Inspired Pork Stew combines well-browned pork, seasonings and two staples of Southern U.S. cooking, black-eyed peas and okra, into a delicious and hearty stew.  The different ingredients combine their flavors and textures into a chunky but silky stew perfect for cooler weather dining.  Chipotle peppers in adobo add a subtle, spicy, smoky element to the stew and perfectly complement the other seasonings.  We recommend a starter of Grilled Radicchio and Arugula Salad followed by Southern Inspired Pork Stew, accompanied by a light, dry red wine for a wonderful weekend dinner.

Stewed Okra and Tomatoes

Stewed Okra and Tomatoes is a tasty side dish and a classic of Southern cooking. It always reminds us of the end of summer, when both okra and tomatoes are plentiful. Our Stewed Okra and Tomatoes includes Creole-inspired seasonings, giving it slightly spicy touch.  The addition of apple cider vinegar, which goes so well with tomatoes, reduces the “sliminess” of the okra, making it more palatable to those who don’t care for that aspect of cooked okra. Stewed Okra and Tomatoes pairs well with a variety of grilled meat dishes, especially pork.  We suggest serving Stewed Okra and Tomatoes with our Fast and Fabulous Pork Chops for a great dinner.

Hoppin’ John

Hoppin’ John, the dish with the curious name.  Black-eyed peas are a staple of Southern cooking in the United States, featured on every table, rich and poor, city and country.  Black-eyed peas are the base ingredient of this dish. Hoppin’ John is traditionally served over steamed white rice on New Year’s Day accompanied by sautéed greens; legend has it that it will bring good luck throughout the year to all who partake of it.  Now you don’t have to live in the American South nor wait until New Year’s for it, make some any time you like. While there are many Hoppin’ John recipes, we think ours brings together black-eyed peas and smoked pork for creamy, wonderful results. Refrigerate leftover Hoppin’ John, it is great reheated the next day, some say it tastes even better!
