Keto Deconstructed Salmon Handrolls

We both really love sushi, sashimi and temaki, also known as hand rolls, particularly salmon hand rolls.  Being on a Keto diet, rice is problematic due to its carbohydrate content.  We have come up with a creative solution with our Keto Deconstructed Salmon Handrolls which use shirataki noodles in place of the rice.  Keeping most of the other hand roll elements intact in these Keto Deconstructed Salmon Handrolls, we have rearranged them  to create a deconstructed, Keto-friendly recipe. Colorful, with lots of different textures and flavors, we think our Keto Deconstructed Salmon Handrolls taste great, make an attractive presentation and are fun to eat too!  Serve with Grilled Asparagus for a light, tasty meal.

Keto Deconstructed Salmon Hand Roll

Prep Time: 15 minutes, Total Time 30 minutes Serves: 2

Ingredients:

  • 4 oz Shirataki Spaghetti or Angel Hair Noodles
  • 2 tsp Mirin
  • 2 tsp Rice Wine Vinegar
  • ½ tsp White Sesame Seeds
  • ½ tsp Black Sesame Seeds
  • 4 oz. Smoked Salmon
  • 1 sheet of Nori (approximately 8” square)
  • 1 cup Matchstick Carrots
  • Low-Sodium Soy Sauce
  • Wasabi

Keto Deconstructed Salmon Hand Rolls

Preparation:

  1. Drain the shirataki noodles well and place in a mixing bowl.
  2. Add the mirin and rice wine vinegar to shirataki noodles, combine to coat the noodles and set aside for 15 minutes.
  3. Combine the white and black sesame seeds in a small bowl and set aside.
  4. Cut the sheet of nori into 1” by 1/8” slivers and set aside.
  5. Using your hands, break the smoke salmon into pieces and set aside.
  6. Sprinkle the slivered nori onto two salad plates.
  7. Drain the shirataki noodles well and arrange evenly over the nori on the plates.
  8. Sprinkle the matchstick carrots over the shirataki noodles.
  9. Arrange the smoked salmon pieces over the matchstick carrots.
  10. Sprinkle the combined sesame seeds over the plates.
  11. Put a smear of wasabi on each plate.
  12. Serve with low sodium soy sauce on the side.
