Miso Sake Grilled Beef

Miso Sake Grilled Beef combines elements from Japanese cooking in a surprising and very flavorful marinade for beef. Mild white miso and dry sake serve as the base for the marinade, enhanced by the other ingredients; basting the beef while on the grill with the marinade further adds to its flavor.  Beef top round or London Broil are the cuts recommended for Miso Sake Grilled Beef, though eye of round or bottom round would work equally well.  Start your meal off with an Heirloom Tomato Caprese Salad, then move on to Miso Sake Grilled Beef with Grilled Asparagus or green beans on the side; accompany your main course with a dry red wine, like a Primitivo or a Sangiovese.

Thai Beef with Mint and Basil is a rich dish full of typical Thai flavors, it is based on the Thai dish Nue Gra Pao.  Flank steak works best for this dish, as it takes to the hearty marinade and sauce and does not shred while stir-frying, though you can use chuck steak as well.  Serve Thai Beef with Mint and Basil with Spicy Sichuan Chili Crisp, for those who want more heat, lime wedges, and white rice or cauliflower rice, if you’re carb-conscious, accompanied by a crisp, dry rosé wine.

Beef and Bok Choy Stir-Fry

Neapolitan Steak Pizzaiola

Beef and Green Beans Stir-Fry

The inspiration for our Beef and Green Beans Stir-Fry came from a Chinese cooking class Jan’s mom took in the Netherlands when he was in grade school. It was a special dish his parents would prepare together for themselves on the weekends, as this was considered “not food for kids”; the kids had more everyday fare during those meals. Well, Jan did get to taste it a few times and I loved it; he still does so today. Jan recalls that the original recipe called for 1 tablespoon of sherry, 2 tablespoons of soy sauce and a ½ clove of garlic as the marinade; the garlic was revolutionary for Dutch cooking in the 60s! 

Easy to prepare, Beef and Green Beans Stir-Fry is a great weeknight dinner; you can prepare the marinade and marinate the beef in the morning too. Start out with a quick and easy to prepare Sicilian Orange Salad for a juicy, sweet and savory beginning to your meal. Beef Braciole

Beef Braciole are a true Italian treat and worth the time and effort to make them. Of Sicilian origin, braciole are enjoyed throughout Italy and in the USA too; while usually made with beef, braciole are also made with pork and even fish. Going the traditional route here, thinly sliced beef rolled up with cheese and other seasonings tucked inside are browned gently then simmered in tomato sauce until so tender that they break apart with a fork, no knife required. For a simmer sauce, consider using our Rosemary Marinara, Quick Tomato Sauce, or Marjoram Marinara. This recipe makes individual, small braciole versus a single large braciola which is served as individual slices.

Beef with Bell Peppers and Tomatoes is an unusual American Chinese recipe reconstructed from memory.  As a child, Vito’s parents would often take him and his siblings to dine out at the New Moon Chinese Restaurant in Union City, NJ; this dish was among Vito’s favorites on the menu.  Vito was fascinated by the use of tomatoes in it, which he can’t recall ever seeing on any Chinese restaurant menu in those days.  Beef with Bell Peppers and Tomatoes is different and delicious.

Red Soup

Red Soup is a family recipe; my Mom faithfully made her version of it every Monday for dinner, except when we were on vacation, for over 65 years.  Imagine that!  I’ve enhanced my Mom’s very basic recipe and updated it for today’s home cook.  Red Soup is delicious and nourishing on its own or with the addition of soup pasta such as orzo, tubettini, acini de pepe or even every kid’s favorite, alphabet letters.  Mom was fond of starting a dinner of Red Soup with an appetizer of Breaded Cauliflower. This recipe makes a large amount of Red Soup, enough to enjoy for dinner and pack-up portions for future lunches and dinners too.
