Grilled Asparagus

Grilled Asparagus is a perfect appetizer or side dish for an all-from-the-grill dinner or lunch; grilling unexpectedly heightens the natural grassy flavor of fresh asparagus. A welcome change from the more common steamed asparagus, grilled asparagus is easy to prepare; the only challenge is to use asparagus stalks of similar diameter for even cooking. We recommend using very fresh asparagus, preferably within a day of purchase. For ease of operation, use commercially available minced garlic and crushed ginger. Crushed ginger is available at Indian or Middle Eastern grocery stores or on-line.  Try some Grilled Asparagus with Indonesian Chicken for a colorful, tasty dinner.

Grilled Pasta alla Norma

Lush and smoky, Grilled Pasta alla Norma, is our take on this classic Sicilian dish, said to be a favorite of the 19th century composer Vincenzo Bellini and named for his greatest opera heroine.  Bellini was a native of Catania, Sicily as was Vito’s paternal grandmother.  Here we grill the eggplant, yielding a deep, smoky element, prior to incorporating it into the sauce.  Start with our Sicilian Orange Salad, then have our Grilled Pasta alla Norma with penne, ziti or rigatoni pasta, topped with freshly grated ricotta salata, and accompanied by a Nero d’Avolo or Primitivo for a Sicilian themed dinner.

Indonesian Chicken

Indonesian Chicken is inspired by Satay Ayam, the grilled Indonesian chicken on skewers.  The zesty and colorful marinade works its magic on the chicken breasts, imbuing them with a wonderful flavor and color; basting the chicken breasts with the marinade while grilling, deepens the rich flavor and helps to keep them juicy. Grilled Italian Sausage and Peppers Two Ways

Grilled Italian Sausage and Peppers Two Ways offers two crowd pleasing ways to serve these favorites.

Growing up in an Italian-American family in New Jersey, Italian sausage and peppers was a favorite and familiar summertime meal, whether from the backyard barbeque grill at Vito’s grandparents’ house or from one of the innumerable kiosk restaurants rising from or lining the boardwalk at seaside resorts “down the shore”, no tables, just counters with bar stools to “eat it there or take away somewhere”.  Regardless of the venue, Italian sausage and peppers never failed to satisfy. 

We have always preferred the grill to the griddle for cooking sausages and peppers; the slightly smoky and charred exteriors of the sausage links and peppers pieces yielding to juicy, flavor-bursting interiors upon biting into them.  Here, we’ve prepared grilled Italian sausage and peppers two ways; the classic on a roll topped with melting provolone and mozzarella cheeses and grilled pepper strips and an alternative preparation with the sausages sliced into thin rounds and combined with the grilled pepper strips, then all mixed into quick tomato sauce with pasta.  Either way, you will surely be satisfied. Grilled Bruschetta Two Ways
